Steak Eggs & Potato Hash.

For the potatoes:

  •  2 large sweet potatoes
  •  2 large Idaho potatoes
  • 1 large onion, chopped
  • 2 springs of fresh rosemary, taken off vine
  • 2 spring of fresh thyme, taken off vine
  • 3 cloves of garlic, minced
  • 3 scallions, cut up.
  • 1/2 tablespoon kosher salt
  • 1/2 teaspoon blackpepper
  • 1/2 teaspoon paprika
  • 1/2 garlic powder
  • 2 tablespoon olive oil
  • salt to taste


For the steak:

  • 1 pound beef sirloin
  • 2 tablespoons lemon juice
  • 1 teaspoon kosher salt
  • 1 teaspoon garlic powder
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon blackpepper
  • dash of dry thyme
  • 1/4 teaspoon pepper flakes
  • salt to taste.

To Make The Potatoes:

  1. Peel and cut potatoes into decent size cubes (see picture) be sure while cutting to place those already cut into cold water so it doesn’t turn brown.IMG_3127IMG_3128IMG_3130
  2. In a large skillet place olive oil, once hot add potatoes, onions, scallions, garlic, rosemary & thyme, stir, place on low/medium heat.IMG_3138IMG_3140
  3. Add kosher salt, black pepper, paprika & garlic powder, stir.IMG_3143IMG_3144
  4. Allow to cook on low heat for 15-20 minutes or until cooked (cooking time will vary based on the pan you’re using and the size of your potatoes). Be sure to stir occasionally but gently, you don’t want to mash it up.
  5. Once cooked, turn off stove and set aside.IMG_3147

To Make The Steak:

  1. Rinse steak & pour lemon juice on it.
  2. Season steak with kosher salt, garlic powder, ginger, black pepper, dry thyme & pepper flakes.
  3. Place on hot grill and cook for 4 minutes on each side, or until cooked to your liking.
  4. Let sit for 5- 10mins (gets the juices flowing)
  5. Cut into strips and place atop your potato hash
  6. Top with an egg cooked how ever you like & enjoy! 🙂 IMG_3155
