Okay I know, why not just call them deviled eggs, but its Resurrection Sunday & it just felt weird 😐 .
These are super easy, healthy & yummy to make!
- 2 eggs
- 1 large avocado
- pinch of kosher salt
- pinch of blackpepper
- pinch of garlic powder
- pinch of cayenne
- 1 tablespoon lemon juice
- 2 tablespoons fresh cilantro, chopped.
- plus salt to taste
Side note: A pinch is like… let’s say 1/8 teaspoon, if you need a measurement 🙂
- Boil eggs, peel, cut in half vertically & take out egg yolks to add with avocado, place egg whites to the side.
- Place avocado, egg yolk, lemon juice, kosher salt, cilantro, black pepper, garlic powder and cayenne pepper in a bowl, mix. Add salt to taste.
- Add mixture to egg whites , sprinkle a little paprika on top & YUM!
