Avocado Stuffed Eggs.

Okay I know, why not just call them deviled eggs, but its Resurrection Sunday & it just felt weird 😐 .

These are super easy, healthy & yummy to make!

Ingredients:

  • 2 eggs
  • 1 large avocado
  • pinch of kosher salt
  • pinch of blackpepper
  • pinch of garlic powder
  • pinch of cayenne
  • 1 tablespoon lemon juice
  • 2 tablespoons fresh cilantro, chopped.
  • plus salt to taste

Side note: A pinch is like… let’s say 1/8 teaspoon, if you need a measurement 🙂

Procedure:

  1. Boil eggs, peel, cut in half vertically & take out egg yolks to add with avocado, place egg whites to the side.
  2. Place avocado, egg yolk, lemon juice, kosher salt, cilantro, black pepper, garlic powder and cayenne pepper in a bowl, mix. Add salt to taste.IMG_3162IMG_3164IMG_3165
  3. Add mixture to egg whites , sprinkle a little paprika on top & YUM! IMG_3168
